Ingredients

    Dried Fruit sultana 0.5 cup
    Instant Coffee, made with boiling water 0.5 cup
    Lurpak lighter, 90g
    Vanilla essence, 1 tsp
    Splenda Brown Sugar Blend, 0.5 cup tightly packed
    1 medium egg
    Self Raising flour, (whole meal ideally), 1.5 cup
    Cinnamon, ground, 1 tsp
    Bicarbonate of Soda, 0.33 tbsp
    Apples, fresh, core removed, 1 small finely grated
    Powdered Icing Sugar, 2 tsp

Directions

Grease and line a pan 19cm by 29cm

Combine sultanas with the strong coffee and leave to cool.

Cream together the splenda blend, lurpak lighter and essence until fluffy. Beat in egg

Sift in half the flour, soda and cinnamon mixture and add the sultana mixtureand mix in. Stir in remaining flour mix and sultana n mix and then stir in the apple.

Spread mixture into pan, smooth out and then bake in oven at 190C for approx 20 - 25 mins until springy to the tough and golden brown.

Turn out onto rack after few mins, tuen right side up and dust lightly with the powdered icing sugar. When cool, cut into 16 squares and enjoy!

    Lurpak lighter is a brand of butter/spread with half the fat of the standard. Any half fat butter or spread would do.
