    1 medium onion, chopped
    2 cloves garlic, crushed
    1 1/2 tbs olive oil
    2 stalks celery, chopped
    600gm zucchini, chopped
    600gm broccoli, chopped
    600gm cauliflower, chopped
    8 cups water
    4-5 chicken stock cubes
    Salt & Pepper to taste


Fry onion, garlic & celery in oil until onion is soft. Add remaining ingredients, bring to boil then simmer for 20 minutes or until vegetables are tender. Remove from heat and then puree to desired consistency.
