Number of Servings: 32

Ingredients

    3 eggs
    1 cup canola oil
    2 cups sugar
    2 cups grated zucchini
    1 TBSP vanilla
    1 tsp baking soda
    1 TBSP cinnamon
    1 tsp nutmeg
    1 tsp salt
    3 cups flour

Directions

Mix in order. Bake in small greased & floured loaf pans @ 350 degrees for 30-35 minutes. Makes 4 small loaves cut into eight slices each. One serving=1 slice.

    Very good, but insanely high calorie as is. Substitute egg whites instead of eggs, applesauce instead of oil, and I cut the sugar in half, which still tasted great. Made two, regular-sized loaves, which I baked for 50 minutes a piece. - 7/13/08

    Instead of the eggs, I used 1 1/2 mashed bananas. I think it made it a little sweeter. Excellent recipe! - 7/31/07

    I baked these tonight, I used egg beaters, applesause, and splenda, also used 1 cup of wheat flour and 2 cups white flour. Made 9 large muffins. Pretty Good. Have room for some nuts next time. Will keep this recipe with changes. Thanks BBJKASHAW. Forgot to add I only used 1 1\2 cups of splenda. - 7/8/09

    Tasty and turned out well. Used 2 eggs instead of 3, 1 c applesauce instead of the oil, and 1/2 c sugar and 1/2 brown sugar and 1-1/2 tbs cinnamon. Took a little longer to bake, but it was well worth it. - 7/3/12

    I made this zucchini bread today, and I have to say that it was a hit with my entire family! It is an easy-to-make recipe with basic ingredients. I already had everything I needed in my cupboards/fridge. I only used 1 cup of sugar, and that was plenty. Next time I might only use 3/4 cup of sugar. - 9/4/10
