Introduction
I made these bars on a whim while craving a pumpkin-y granola bar that would keep me full (with lots of fiber and protein). Feel free to play with the spices and cut down on the sugar as you see fit! The soy nuts could easily be exchanged for any nut (something like pecans would probably taste a bit more fall-like).Also feel free to cut them up into smaller servings! I wanted mine to serve as breakfast or a mini-meal so I made them slightly bigger.
I had trouble getting the crust to stay together when I added the bar mixture. Any suggestions on how to alter the recipe to fix this are more than welcome! Enjoy! Ingredients

CRUST
3/4 cup flour
1 + 1/4 cup wheat bran
1/2 cup butter
1/3 cup brown sugar
1 tsp cinnamon

2.5 cups old fashioned oats
1/2 cup brown sugar
1/2 cup splenda
1/2 cup wheat germ
1/2 cup flour
1 cup wheat bran
60 grams soy nuts (or nuts of your choice)
1 tsp pumpkin pie spice
1 tsp cinnamon
1 tsp ginger
Pinch of nutmeg and cloves
1 egg
1 cup pumpkin (Libby's)
1/4 cup honey
Directions
Preheat oven to 350 degrees. Grease a large oven-safe dish.
CRUST
Mix all crust ingredients in bowl. It should form a crumbly crumb-like mixture. Press it into the bottom of dish. Cook for 15-20 minutes or until crust seems solid. Remove from oven and allow to cool.
BAR
Meanwhile, prepare the bar mixture. First, mix all of the dry ingredients and spices in a large bowl. Mix the wet ingredients in another bowl. Add to dry ingredients and mix thoroughly. Once the crust has cooled gently add the bar mixture to the top of the crust. Be careful not to tear the crust up as you add it.
Cook for 35 minutes at 350 degrees. Let cool completely and then cut into 20 bars. Wrap individually for an easy to grab snack!
