Introduction

Ingredients

    6 tbl olive oil
    2 cups raw chopped onions
    16 cloves garlic
    2 tbl oregano
    4 tbl basil
    2 tsp salt
    1.5 tsp ground black pepper
    1 cup diced celery, cauliflower, capsicum, zucchini
    2 cups chopped carrots, mushrooms
    4 cups chopped tomatoes
    50 gms granulated sugar
    3 tab balsamic vinegar

Directions

fry onions, herbs seasonongs until onions are soft. Add sugar and vinegar, then tomatoes. Add hard vegies and soften about 5 mins, then rest of vegies, wine and slow cook. Bottle in sterilised jars - I use 500 mls old commercial pasta sauce bottles.
