Before I moved out, mom taught me her spaghetti sauce secrets. Leftovers freeze well for a base for another pot of sauce or to be used as pizza sauce. Ingredients

    2 cans of diced tomatoes
    1 can tomato sauce
    2 tbs. olive oil
    1 tbs. oregano
    1 tbs basil
    2 bay leaves
    1 tsp salt
    4 tsp minced garlic
    1/4 of a yellow onion, chopped
    2-3 tbs red
    1 zucchini, sliced
    .5 cup sliced muchrooms


Directions

1. add olive oil to warm sauce pan, adding herbs, onions, garlic, zucchini and mushrooms. cook until zucchini and mushrooms are soft.
2. add red wine, stirring into previously added ingredients.
3. add cans of tomato products and stir.
4. cook over medium low heat, stirring occasionally for about 1-2 hours.

makes approximately 10 servings
