Introduction

This recipe originally had beef which I replaced with tofu. You can also make it with chicken. It's an interesting mix of flavors. This recipe originally had beef which I replaced with tofu. You can also make it with chicken. It's an interesting mix of flavors.

Ingredients

    10 oz tofu, cut into 1/2” cubes
    1 t oil
    1 large onion, diced
    1 small winter squash, peeled, seeded, chunked
    1 28-oz can crushed tomatoes
    1 cup Trader Joes roasted corn
    2.5 cups water
    .25 t dried marjoram
    .25 t dried thyme

Directions

Sauté tofu in a 3-quart saucepan in oil (and water as needed) until lightly browned. Remove from pan. Add onions to pan. Top with squash. Cover and cook over low heat until tender about 15 minutes. Add sautéed tofu and remaining ingredients. Simmer, covered, until squash is tender about 15 minutes.
