Ingredients

    2 tbsp. peanut or grapeseed oil
    1 c. water chestnuts, chopped pea-sized
    1 c. fresh mushrooms, minced
    2 cooked chicken breasts, minced OR 2 c. cooked ground chicken
    1 tsp. garlic, crushed
    3 tbsp. onion, minced
    4 scallions, chopped (green only)

    2 tbsp. soy sauce
    2 tbsp. brown sugar
    2 tsp. rice wine vinegar

Directions

Heat wok or non-stick pan on high heat.

Prepare sauce by combining soy sauce, brown sugar and rice wine vinegar in a small bowl. Mix thoroughly.

Add chicken, chestnuts, mushrooms, garlic and onion to heated pan. Pour sauce over and stir fry for a couple minutes. Add in scallions and stir fry until scallions are wilted. Remove from heat.

Transfer to a dish and serve with chilled iceberg lettuce leaves.

Serves 2.
