    3c black beans
    1c corn kernels
    1 tomato, cubed
    1/2c red onion, chopped
    1 red bell pepper, diced
    2 oranges, peeled & cut into small pieces
    1 grapefruit, peeled & cut into small pieces
    1/2c chopped cilantro

    1/4c lime juice
    2tbsp lemon juice
    2 garlic cloves, minced
    3 tbsp veg. oil
    1 tbsp ground cumin
    1/2 tsp salt


Rinse & drain beans. Blanch corn in boiling water for 3-5 minutes. Drain well. In large bowl, toss together beans, corn, tomatoes, onions, bell peppers, orange and grapefruit pieces, cilantro. In a small bowl, whisk together the dressing ingredients. Toss salad with dressing.

    This is FANTASTIC!!! My whole family loved it. The only change is I used Extra Virgin olive oil. This is full of Superfoods and is very filling. - 7/3/09
