Ingredients

    4 oz Turkey sausage or crumbled turkey bacon
    1/2 green pepper, chopped
    1/4 onion, chopped
    5 lrg eggs
    1 sm can sliced mushrooms
    1/2 c. LF shredded cheddar cheese

Directions

Preheat oven to 350 degrees.
Line a muffin pan with baking cups.
Cook sausage, pepper, mushroom and onion for 5 mins or until sausage is no longer pink.
Spoon mixture evenly into bottom of muffin cups.
Scramble eggs in small bowl, pour over mixture in cups.
Sprinkle with cheese.
Bake for 20 mins or until egg is set.

Makes 6 muffins.

    My DH and I made these minus the mushrooms and thought they were fab. We made them ahead of time and put them in the fridge for a quickie breakfast! - 1/5/10
