Introduction

Ingredients

1.25 lb ground bison meat. beef can be used instead
1 large yam
3 carrots peeled and chopped
1 onion peeled and chopped
1 small zucchini chopped, peeled if required
1/2 medium eggplant peeled and chopped
spray oil
optional seasoning
Directions
6 servings
peel, cube and boil yam til soft. mash when cooked.
sweat onions and carrots in a large pan. use oil if wanted.
once carrots soften, add meat and cook through.
once meat is cooked, add zucchini and eggplant cubes and cook for 5-10 mins. gravy and seasonings can be added at this point if wanted.
put meat mix in the bottom of an oven proof dish and top with mashed yams.
cook in 350f oven til yams brown slightly.
can be topped with cheese if wanted. nutritional info does not include any cheese or gravy ingredients.
