Introduction
I make this omelet every morning - it's high protein, low fat, and so super delicious!I rinse & drain all of the beans and throw them in a big tupperware - then I can easily access them in the morning. I make this omelet every morning - it's high protein, low fat, and so super delicious!

Ingredients

3 - 4 egg whites
1 tbsp kidney beans (rinsed & drained)
1 tbsp pinto beans (rinsed & drained)
1 tbsp black beans (rinsed & drained)
1 cup (or 1 small) yellow or green zucchini
salt, pepper, italian seasonings (basil, oregano, thyme, or anything you like!)
Directions
Slice the zucchini and layer evenly in the bottom of a medium-sized frying pan.
Beat egg whites and pour on top.
Sprinkle beans on top.
Season with salt, pepper, and seasonings.
Put a lid on and let the omelet cook until the edges start to brown.
Carefully (and kind of quickly!) flip the omelet and cook the other side for a few minutes.
Enjoy!
