Ingredients

    1/2 cup canned pumpkin, unsalted
    1/2 cup brown sugar
    2 egg whites
    3/4 cup flour
    1/2 tsp baking soda
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    1 1/2 cup rolled oats
    1/2 cup raisins

Directions

Preheat oven to 350 deg. Mix pumpkin and sugar until combined well. beat in egg whites. Gradually stir in flour, baking soda, and spices; add oats and raisins - mix well. Lightly coat a cookie sheet with nonstick spray. Drop dough by the spoonfuls and bake 10 - 20 mins.

Serves 10.

    Very Good
    I did the same thing as BIRDZNQUILTS by using applesauce and pumpkin pie spice. I also cut the oats to 1 cup and upped the flour to 1 cup since the oats can dry things out a bit much. I used 3/4 cup pumpkin puree, but may think about using a full cup next time. - 10/26/12

    These were really dry and just didn't do it for me. They have a decent flavor, just dry and very chewy. I made it exactly as the recipe states. - 10/20/10

    Incredible!
    I make very similar, though I substitue splenda for sugar, whole wheat & soy flour vs. white. I like the other review add flax seed to mine too.I use applesauce to help keep them really moist & pumpkin pie spice (just to make it a little easier) ;0) Thanks for sharing. - 4/9/10

    these were great, i added some flax seed meal as well, and the best was my 7 year old son loved them so i didn't feel guilty putting cookies in his lunch! - 11/12/09
