Ingredients

    3 cups low-fat ricotta cheese
    2 cups mozzarella cheese
    2 eggs
    1 pound italian sausage
    1 (48 oz) jar marinara sauce
    12 cooked whole-wheat lasagna noodles
    1/2 cup grated parmesan cheese

Directions

Recipe is written to make 2 pans: one for today, and one to freeze! 6 servings per pan or 12 servings total.

Mix ricotta cheese, mozzarella and eggs. Cook sausage in saucepan until browned; drain. Stir in marinara sauce and bring to a simmer. Spred 1 cup sausage mixture in each 2-quart shallow baking dish. Top with 2 noodles and 1 cup ricotta cheese mixture. Repeat layers. Top each pan with 2 noodles, remaining sausage mixture and parmesan cheese. Bake at 400 degrees for 30 minutes or until hot. Let stand 10 minutes.

To freeze, prepare lasagna but do not bake. cover tightly with foil and freeze. Bake frozen lasagna uncovered at 350 for 1 hour 15 minutes or until hot. Or, refrigereate 24 hours to thaw and bake uncovered at 350 for 50 minutes or until hot. Let stand 10 minutes.

    Very Good
    I would of course prefer flour pasta but this makes a very good lasagna. The italian sausage was a very good touch over the normal hamburger meat. I will make it again. - 1/29/09

    Oh. WOW. Did I say WOW??? Hands down, the best lasagna I have had in YEARS. Cooked perfectly crispy on the edges, ooey and gooey in the middle with generous meat throughout, flavor was outstanding and family loved it as well. A WINNER!!!!! Making this again and again and again. - 1/13/09
