The panko crumbs give the chicken a crispier taste without the need to fry. The parchment paper eliminates the need for spray oils so the overall fat is reduced. Ingredients

    1/2 cup whole wheat panko bread crumbs
    garlic
    parsley
    cayene pepper (dried)
    italian seasoning
    1 egg, beaten
    1 pound chicken breast
    parchment paper

Directions

Cut chicken into tenders (unless you bought them that way!)
Mix bread crumbs and spices in a dish.
Beat egg in a seperate dish
Dip chicken in egg then breadcrumbs. Place on a cookie sheet lined with parchment paper. Bake at 375 degrees for 20 minutes.

    Great easy recipe for crispy chicken. made with and without parmasam and it`s good both ways. For extra crispy coating try double dipping the tenders. - 8/5/12

    Very Good
    Good recipe, I had to guess on the seasoning amounts and was a little light handed so the crust was a little bland. Next time I will strengthen,the spice amounts and take the advise of one of the other comments to add a tablespoon of parmigiana cheese.

    This was just what I was looking for! I wanted a chicken tender recipe with low sodium and this was perfect. So crispy and not soggy at all. The only thing I did different was add a tbsp of grated parmesan cheese to the crumb mix. I will defintely be making these again soon! - 10/2/11
