Introduction

Ingredients

You will need:
4 Apples (large)
1 tsp. Cinnamon (ground)
dash of Allspice
1 tsp. Vanilla extract
1/2 c. Water
4 Tbs. Rice dream (original) milk (if you aren't vegan you may use low fat/skim milk instead)
1/2 tsp. Liquid stevia
Directions
1) Prepare apples by cutting core out from the top of apple, approx 3/4 of the way through apple (making sure to leave bottom in so your filling will stay put!)
2) In a small soup pan pour in water and vanilla extract and place on stove top at medium/low temp and bring to a simmer
3) In the meantime combine milk, cinnamon, dash of all spice, and milk in a small bowl and mix thoroughly
4) Carefully (and evenly) distribute milk and spice mixture into the top of each apple, filling to the brim
5) Place apples into the pot of simmering water (water should only just cover bottom of pan) turn heat to low and cover with lid
6) Let simmer for approx 10 minutes, checking in between time to see if water needs to be added to bottom of pan (this is important so that the steam thoroughly cooks the apples) You may check with a toothpick or fork to see that the apples are cooked through
Remove from pan and serve hot (sprinkle again with cinnamon if desired)
