Ingredients

2 fresh ripe heirloom tomatoes, sliced
6 oz. tuna steak
2 cloves garlic, minced
2 T. olive oil
1 T. red wine vinegar
1/4 to 1/2 tsp. red pepper flakes, to taste
8 lg. imported black olives, chopped
Salt and freshly ground pepper to taste
1 T. chopped chives
Directions
1. Arrange the tomato slices on an attractive serving plate, or on individual plates.
2. Heat a heavy nonstick pan over high heat until very hot. Quickly sear the tuna for 1 minute on each side. Set aside.
3. Mix together the garlic, olive oil, vinegar, pepper flakes, and olives in a bowl. Season to taste with salt and pepper. Slice the tuna into thin strips and toss the strips in the olive oil mixture. Spoon onto the tomato slices, sprinkle with chives, and serve.
