Cornbread, the way I was taught to make it. Perfect accompaniment to soup or stew. Cornbread, the way I was taught to make it. Perfect accompaniment to soup or stew.
Number of Servings: 8

    1/2 cup flour
    1/2 cup yellow cornmeal
    1 tsp salt
    2 tsp baking powder
    1 egg
enough milk to make a medium thickness batter

Approximately 8 servings. Use a small cast iron skillet, not large. You must use cast iron!

Oil skillet with olive oil, approximately 2 Tb (or to cover bottom of skillet). Preheat oven to 425F.

Mix flour, cornmeal (coarse grind), salt, baking powder, egg and enough milk to make a batter that flows smoothly when dripped from a spoon. Pour batter into the cast iron skillet and cook until done at 425F, approx. 30 minutes.

If you want to use a large cast iron skillet then increase flour to 1 cup and meal to 1 cup.

Number of Servings: 8

  • Thank you for a cornbread recipe that's not sweet. I have lived in the south all my life, I've eaten a lot of cornbread and I don't believe it should taste like cake. - 12/10/09
