Ingredients

3/4 c unsweeted soy or almond milk
1/2 tsp apple cider vinegar
1 c plus 3 tbsp applesauce (unsweetened)
1.5 c Arrowhead Mills Gluten Free All-Purpose Baking Mix
3/4 c oat bran
2 tsp baking powder
1/2 tsp baking soda
1.5 tsp cinnamon
dash of cloves, allspice, nutmeg to taste
1/8 tsp salt
Dried fruit and nuts as you wish. I used:
1/4 c craisins
1 oz walnuts, chopped
6 dried apricots, chopped
1 small apple, chopped (unpeeled)
1 tbsp chia seeds
Directions
Whisk soy milk with apple cider vinegar, let curdle 1 minute.
Add applesauce, whisk
In a separate bowl, sift flour, oat bran, baking powder, baking soda, cinnamon, spices, fruit and nuts
Fold dry into wet
Bake at 350 degrees for 25-30 minutes depending on what size muffin tins you use. I made two mini muffins tins and one normal-size tin, which would equal about 20 medium-sized muffins.
