This is very easy to make, but with huge taste! Fresh ingredients make this special. It's great when tomatoes are plentiful. Ingredients

4 ripe tomatoes, chopped coarsely (about 1 lb/250g)
1 1/2 tbsp. red wine vinegar
2 tbsp. olive oil
1/4 cup thinly sliced onion
1 clove garlic, minced
fresh basil leaves, chopped or shredded (to taste, or minimum 6-8 leaves)
salt and pepper to taste
(approx 1/2 cup cooked pasta per serving)
Directions
Chop tomatoes. If they're especially juicy, you may wish to drain some of the juice off.
In a large bowl, whisk together oil, vinegar, salt and pepper. Stir in tomatoes, garlic and chopped onion. Add basil, salt and pepper. Serve over pasta. Top with 1 tbsp parmesan cheese.
