Ingredients

    6 x 300g lamb shanks, Frenched
    Plain flour for dusting
    2 Tbsp olive oil
    2 brown onions, finely chopped
    4 cloves garlic, crushed
    2 cups red wine
    3 x 400g cans chopped tomatoes
    2 cups water
    1 Tbsp caster sugar
    4 bay leaves
    2 springs marjoram

Directions

Dust the shanks with flour and shake off any excess. Heat a large heavy-based saucepan over high heat. Add the oil and shanks and cook for 2 minutes each side or until weel browned. Remove from the pan and set aside. Add the onions and garlic to the pan and cook for 2-3 minutes or until golden. Gradually add the wine scraping the bottom of the pan and cook for a further minute. Add the tomatoes, water, sugar, bay leaves, marjoram and shanks an bring to the boil. Reduce the heat to low, cover with a tight-fitting lid and simmer for 2 hours or until the meat is tender and the sauce thickened.
