Ingredients

1/4 Cup All Purpose Flour
1/4 Cup Whole Wheat Flour
1/3 Cup Quick Oats
1 tsp Baker's Yeast (Any variety should do)
1/4 Cup Lowfat Buttermilk
1/2 tsp Salt
1 scoop 100% Whey Protein (about 100 calories, 25 grams protein)
2 packets Splenda or other Artificial Sweetener
Water
2 Egg Whites
Directions
Place yeast in 2 oz of warm water and set aside.
Mix All Purpose Flour, Whole Wheat Flour, Quick Oats, Buttermilk, Salt, Whey Protein and Splenda in a separate bowl. Add water if batter is too thick. Add yeast mixture and beat with an electric mixer on high for two minutes. Let raise for 30 minutes.
In another bowl, beat egg white on high until medium peaks form (about a minute) and fold into main mixture. Let rest for another 30 minutes.
Cook on a greased waffle iron for 3-5 minutes. Serve with choice of topping (I like peanut butter and sugar-free syrup).
