Introduction

A delicious grain salad that I love to bring to potlucks. It looks so festive and can be served warm or cold. The original recipe only calls for 1 cup of dry couscous, but I use a lot more when I'm bringing it to an event.

Number of Servings: 20

Ingredients

    3 cups dry couscous or Israeli couscous
    1 cup grapefruit or orange juice
    3 cups water
    coriander
    salt
    pepper

    1.5 cups dried cranberries (or less)
    1 cup slivered almonds
    2 large oranges, zest and flesh (chopped into bite-size pieces)
    1 tangerine, zest and flesh (chopped into bite-size pieces)
    1 tbsp fresh mint, chopped
    a few leaves butter lettuce, watercress, or other greenery, chopped
    1 15-oz can garbanzo beans
    1 tbsp olive oil
    1 tbsp lemon juice (or more to taste)
    salt, pepper

Directions

Measure out 3 cups of Israeli couscous. Cook with water and orange or grapefruit juice according to package instructions.

When cooked, stir in cranberries, almonds, orange and tangerine flesh and zest, mint, butter lettuce or other greenery, garbanzo beans, and oil. Add lemon juice, salt, and pepper to taste.

Serve warm or at room temperature.
