Ingredients
-
*NaSoya Eggroll Wrappers (3 per svg), 7 serving
*Dressing - Asian Toasted Sesame Dressing (light), 8 tbsp
*sesame seeds, .5 tbsp
*bagged coleslaw mix, 5 cups
Mushrooms, fresh, 2 cup, pieces or slices
Pepper, black, 1 tsp
*Baked Tofu, Teriyaki, 4 serving
Directions
You start out by chopping and cooking your mushrooms (your choice, I like baby portabellos) in the olive oil.
Add your bagged coleslaw mix with your asian sesame dressing, after your mushrooms have cooked for 5 to 8minutes.
Add your sesame seeds after 5 minutes, mix through.
Let this mixture cook through until soft but still crunchy, this takes about 10 minutes.
Once the mixture is done, take it off the heat and place it into a big bowl so you have it ready to go when you are wrapping.
Now its time to organize your items. You will need the mixture you made, your eggrolls, a bowl/cup of water, and your Tofu cutt up into 1inch slices. You will also need a plate to set them on as you make and place onto another plate to hold them.
Follow the Eggroll wrappers directions on folding. But as to the amount to put into each its about a spoonfull and maybe a half. You want to fill them, but make sure they close nicely. As you place the mixture into the wrappers, place 2pieces of tofu on top and then roll.
Once you have rolled them, you may have extra. I like to freeze and save for the next batch. It will make enough.
You can fry or bake them, if baking brush with Olive oil and grease your baking sheet. Frying can add fat, but its your choice.
I hope you enjoy and try not to eat too many... ;)
