Introduction

This is my favorite go-to recipe and I make it atleast once a week. Number of Servings: 4

Ingredients

    One Pork Tenderloin (appx a pound, but go bigger if you can)
    One can of dice tomatoes w/ chiles
    Half cup of onions
    Two cloves of garlic
    Two tsp cumin
    Two tsp red pepper flake
    Bag of spinach (appx 4 cups)
    Four Tbsp of sour cream

Directions

Heat 3 tbs of olive oil in a deep skillet on medium heat.
Cut off all visable fat on tenderloin, season w/ salt and pepper (and any other seasoning that you like).
Sear tenderloin on all sides (depending on heat and size will take about 5-7 mins) You want a good crust on it.
In the meantime, pour the can of tomatoes into the slow cooker, add your cumin and red pepper flake and hot sauce to the tomatoes. Crank the heat on the slow cooker to HIGH.
Once the tenderloin is nice seared, take it out of the pan and put on a plate.
Reduce the heat to low/medium and add garlic and onions.
Using a good knife, cut the tenderloin into 4-6 equal pieces. The middle will the raw, this is ok. Toss the pork into the slow cooker and toss it around in the tomatoes.
Once the onions and garlic are translucent, add to the slow cooker. Cover the slow cooker and cook for 3-4 hours.
Serve with 1 cup of raw spinach (the pork will wilt it perfectly) and 1 tbsp of sour cream.

    My family loved this recipe however I changed the recipe a bit. Instead of red pepper I used ancho chili powder and added 4 cloves of fresh garlic. When done I shredded it and made fajitas out of them with some fried onion and green bell pepper. - 11/6/11
