Low in sugar and fat, these muffins get their flavor from a great combination of banana, bittersweet chocolate and oats. At about 80 calories a piece, they make for an incredible treat! Ingredients

1 cup flour (white or wheat)
1 cup quick oats
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1 tbsp ground cinnamon
1 tbsp vanilla extract
2 egg whites
1/2 cup water
1/2 cup applesauce
1 or 2 bananas, mashed
1/2 bar bittersweet baking chocolate, chopped OR 1/3 cup your choice of chocolate chips
1/3 cup chopped walnuts (optional, not included in nutritional information)
Directions
Makes about 18 miniature muffins.
Preheat oven to 400F. Prepare muffin tins with nonstick spray.
Mix dry ingredients in one bowl and set aside. Beat eggs with other wet ingredients and then combine in the bowl with the dry. Stir well, but it's not the end of the world if there are a few little chunks. I usually add chocolate and any other chunky ingredients last.
Fill each mini muffin cup about 3/4ths full with batter. They don't rise a lot because it's a heavy batter. Place in preheated oven and bake for 15 minutes or until toothpick comes out clean.
