Ingredients

    3 cups cooked long grain rice
    3 stalks celery (chopped)
    1 green capsicum (bell pepper) (chopped)
    3 spring onions or 0.5 cup finely chopped onion
    0.25 cup roasted peanuts
    2 hard boiled eggs (chopped)
    Dressing:-
    1 tsp. curry powder
    0.25 tsp ground ginger
    1 tsp sugar
    0.25 tsp salt
    2 tsp lemon juice
    0.5 cup canola oil or salad oil
    0.25 cup malt vinegar

Directions

Mix rice, celery and capsicum together in a bowl.
Make dressing and mix through salad.
The above can be made several days in advanced and kept refridgerated.
Before serving add & mix into the salad peanuts and eggs
Makes 6 cup size servings.
