Introduction
A lovely fruity cake that is so low in fat - give it a try and see ! A lovely fruity cake that is so low in fat - give it a try and see !Number of Servings: 8
Ingredients

8 oz Self-Raising Flour
6 oz sugar (could use sugar substitute)
1 egg
8 oz Mixed Dried Fruit - can be anything at all - apricots/prunes/sultanas/cranberries/blueberries/currants/pineapple whatever mixture you like.
1 tsp mixed spice
1 tsp baking soda
1 cup of freshly made hot tea
1 x 1lb loaf tin
400F for 45 minutes
Directions
Soak the fruit in the freshly made hot tea until the fruit has plumped up - you can do this overnight.
Mix in the sugar or sugar substitute

Put into the loaf tin and bake for 45 mins.
