Ingredients

    1.5 cups white long grain rice
    2.5 cups chicken broth, no MSG
    1.5 tbsp oil
    0.25 cup tomatoe sauce or 1/2 can of sauce
    2 tbs sofrito, homemade (no oil)
    1.5 tbs salt
    2 tsp black pepper
    1tsp dried oregano

Directions

saute sofrito and tomatoe sauce for 3 minutes. Add drained garbanzo beans and washed & dried rice. Add stock and spices. cook on high until thick and slightly less than soupy. Mound rice into a"mountain" shape. reduce temperature to low, cover and cook for 40 minutes. halfway into cooking turn rice around and remound for even cooking.

    I really had a bit of trouble with this recipe. There was way to much black pepper in this (at least for my families liking). I also didn't do the mound. I have never cooked rice that way. So I decided it best to cook the rice the way I knew. It was edible though. - 1/28/10
