Introduction

Easy to make comfort food that can even be made in microwave although I do like it by stove top too (I think cooking time is about the same for microwave or stove top). Number of Servings: 4

Ingredients

    1 cup Wild rice
    1 chicken breast (diced)
    1 clove garlic (or 1/2 tsp garlic paste)
    1/4 tsp olive oil
    1 stalk of celery (diced)
    1 small carrot (diced)
    1.5 cups chicken stock
    1/2 cup water

Directions

You will need a microwavable rice cooker OR you can do it on a stove top.
1. Put oil, garlic and diced chicken into microwavable rice cooker then stir to coat chicken.
2. Cook on high until chicken is 3/4 cooked (still pink).
3. Put in wild rice, celery, carrot, chicken stock and water in rice cooker then stir to evenly mix it around.
4. Cook on high for about 10 minutes until rice is cooked (depends on your microwave-CHECK to see if your microwave has a white rice programmed cooking time and try that). Let it stand a few minutes for absorption method.
The rice should not be crunchy and the carrots should be soft.
