Introduction

A lighter alternative to my original recipe, which is made with bacon & regular evaporated milk. I came up with this one to use some leftover ham and used fat free half & half. Ingredients

    2 c. diced ham
    1 c. chopped onion
    3 c. diced potatoes
    2 c. water
    Pam cooking spray
    3 c. cream style corn
    3 c. cut corn
    6 c. fat free half & half
    salt & pepper to taste

Directions

Spray pot with Pam. Saute ham lightly to warm. Remove from heat. Spray pot again & saute onions & potato 3 min. Pour in water, boil 5-8 min until potatoes start to become tender. Some water will evaporate. Add other ingredients, stir and simmer on low until heated through - 10 min or so. Let sit in pot for abotu 30 minutes for flavors to meld. Add salt & pepper to your taste.
