Number of Servings: 28

Ingredients

    1 lb. carrots, sliced
    3 med. onions (4 C. chopped)
    4 lg. celery stalks, sliced
    2 lg. garlic cloves, crushed
    2 cans (28 oz.) stewed tomatoes
    1/2 sm. head green cabbage, thinly sliced (6 C.)
    3/4 lb. green beans, cut into thirds
    48 oz. chicken broth
    6 C. water
    salt & pepper
    3 med. zucchini, sliced into half-moons
    2 bags (6oz.) baby spinach

Directions

In 12-quart stockpot, cook carrots, onions, celery & garlic over med-high heat for 8 minutes.

Add tomatoes with their liquid, cabbage, green beans, broth, water, salt & pepper. heat to boiling over high heat.

Rduce heat to low, cover & simmer 10 minutes. Increase heat to high, stir in zucchini & spinach, heat to boiling. Reduce heat to low, cover & simmer 10 minutes.

Makes 28 cups

    It was a good, simple, basic soup - if you read up on the soup diet it is intended to be the basis of a variety of soups. For instance one day you could add chicken, corn, black beans and mexican spices like cumin and cilantro to make it mexican. Also supposed to be good with shrimp and turkey. - 1/3/14
