Ingredients
-
2 12 oz. bags broccoli slaw (available in the prepared section of the produce section)
4 3 oz pkg. of beef raman noodles
2 cups canola oil (veg. oil can be substituted)
30 packets of splenda (or 1 cup of sugar)
2/3 cup cider vinegar
1 cup chopped pecans (chopped)
8 green onions (chopped)
Directions
1. Crush raman noodles into small pieces and place on cookie sheet with chopped pecans (or almonds) and toast at 350 degrees for about 8 minutes - until light brown. Let cool completely.
2. Combine oil, splenda packets (or sugar), cider vinegar and seasoning packets from raman noodle packets in bowl with lid or jar. Shake until well combined. Let sit in fridge.
3. Mix together Broccoli Slaw, green onions and cooled noodle/nut mixture. Pour dressing over and enjoy!
**Just a note - I often will take this in my lunch at work, but don't like that the noodles soften in the dressing, so I pack the noodle/ nut mixture in a separate container and add them before eating.
