Introduction

I got this recipe from "Diet 2010" magazine by Better Homes and Gardens. I am vegetarian, so I left out the chicken it calls for. This reduced the calories from 320 to 166.3! Ingredients

    6 cups torn fresh spinach
    2 cups halved strawberries
    1/4 cup chopped pecans, toasted
    Dressing:

    In a blender: 1/2 cup strawberries,1/3 cup OJ, 2T. canola oil, 2 tsp finely shredded lemon peel, 1 T lemon juice, 1 tsp. sugar, 1/2 tsp. chili pepper(optional),1/4 tsp pepper(optional),1/8 tsp. salt.
    If you want to add the chicken back in it's: 4 Medium Skinless, boneless chicken breasts halves(11/4 to 1 1/2 pounds)

    1 cup reduced sodium chicken broth

Directions

For dressing: Blend all together and then simmer for 5 minutes, stirring frequently. Pour over salad.

If you are adding chicken: Cook chicken slowly in the chicken broth until completely cooked with no pink. remove chicken with a slotted spoon, thinly slice and toss in with the rest of the salad.
Serves 4.
