Introduction

A lovely low sugar dessert option to offer to family and friends. Especially nice when served the next day so the jam can really soak into the cake. Reminded one of my diabetic friends of a diabetic friendly christmas cake. A lovely low sugar dessert option to offer to family and friends. Incredible!
Yummy! I left out the salt since my mother has renal problems and I didn't have an apple to put in it. Cooked it in my Xpress Redi Set Go cooker. It made 18 of the mini cakes and 2 of the half cakes in the divided pan. Came out really nice.
    Mother loved this!
