Introduction

This spread makes a great sandwich when layered with thinly sliced tomatoes, cucumbers and avacado on a whole wheat pita. It also works really well as a dip for fresh veggies. Ingredients

    1 can (15oz) Great Northern Beans
    1 tsp. olive oil
    1/4 cup loosley packed parsley
    1 tsp. curry powder (more if you really like curry)
    water, to thin
    1 clove garlic
    2 tsp. lemon juice
    salt to taste

Directions

Combine all ingredients, except salt in the bowl of a food processor and pulse, adding water as needed, until beans make a smooth paste. Add salt to taste and pulse to completely combined. Serve as a spread on sandwiches or as a dip for fresh veggies.

    Quick, easy and very tasty! I put a bit more curry and garlic, as I like them both, and used this as dip with vegetables. I am certainly making it again. - 3/10/10
