Ingredients

    1/3 cup butter
    1/2 cup cocoa powder
    6 eggs
    1/2 to 3/4 cup erythritol or xylitol
    1 tsp vanilla
    1/2 cup coconut flour, sifted
    1 cup dark chocolate chips (optional)

Directions

Pre heat oven to 350 degrees. In a medium saucepan over low heat, blend butter and cocoa powder. Remove from heat and let cool. In a separate bowl, mix the eggs, sweetener and vanilla. Blend this into the cocoa mixture. Stir in the coconut flour and stir until no more lumps. Add chocolate chips if using. Bake in a greased 8x8 pan for 30-35 minutes.

    Great chocolate taste but the coconut flour will take a little time to get used to. It was my first time to ever use it. Would like to try variations. Thanks for the recipe! - 1/17/10

    Incredible!
    This is a good recipe.I like the coconut flour better then wheat flour.I get full on a very little serving. The coconut flour is very good for you. I use coconut oil instead of butter. - 10/5/10
