Introduction

Ingredients

    Whole grain oat flour, .75 cup (Arrowhead Mills or finely grind 1 cup old fashioned oats = .75 cup ground)
    Baking Soda, .50 tsp
    No Calorie Sweetener, 6 tsp (3 packets)
    Cinnamon, ground, 1 tsp
    Nutmeg, ground, .50 tsp
    Vanilla Extract, 1 tsp
    Egg Beaters 100% liquid egg white, 4 tbsp (.25 cup)
    Milk, 1%, .50 cup (can use skim, 1% is what I had)

Directions

Spray pan with non-stick cooking spray, heat on med-high heat. Mix dry ingredients together in small bowl, in measuring cup add milk, liquid egg whites, & then vanilla extract. Whisk wet ingredients in dry until blended smooth. Let sit for 5 minutes to thicken up before pouring into pan.

Makes Eight 3 inch round pancakes. Serving size is 2 pancakes.

Serving Suggestion:
I served mine made with a puree of fresh strawberries, ripe banana and sugar free syrup. Recipe also included and can be found under "Sugar Free Syrupy Pancake Puree". One serving of pancakes & puree is about 130 calories.
