Introduction

Ingredients

    7 quarts of apples peeled and sliced
    4 cups of organic sugar
    1 cup of cornstarch
    10 cups of water
    2 teaspoons of cinnamon
    3 teaspoons lemon juice
    1 teaspoon ground cloves
    1/4 teaspoon nutmeg

Directions

This makes 8 quarts of pie filling = to 4 1 cup servings per quart. Peel slice and place apples in 8 clean quart canning jars. mix remaing ingredients in large pot and cook until thick and smooth- stirring frequently. Pour mixure over jarred apples leaving 1 inch space from top of jar. If you see air bubbles take a clean knife and go along inside of jar to disperse. Wipe jar top clean and apply bands and lids. Close snug but not overly tight and place in water bath(canner with boiling water.) for 30 minutes. Remove from bath and sit on towels for 24 hours then store in cool, dry place. refrigerate after opening.
