Ingredients

1/4 cup dry breadcrumbs
1/4 cup fontina cheese
1/8 cup parmesan cheese
2 cups broccoli florets
2 cups cauliflower florets
vegetable oil cooking spray
1 tablespoon butter, melted
1 tablespoon Dijon mustard or coarse grain mustard
1 tablespoon Sour Cream
1/6 extra firm tofu block
1/4 teaspoon white pepper
Directions
1 - Preheat oven to 425°F.
2 - Combine breadcrumbs with cheese, stir mixture well, and set aside.
3 - Arrange broccoli and cauliflower in a steamer basket over boiling water.
4 - Cover and steam until tender-crisp (4 minutes).
5 - Coat a 1 1/2 qt casserole dish with cooking spray.
6 - Drain veggies and place in casserole dish. Toss with cubed tofu... Salt and Pepper.
7 - In a small bowl, mix butter, mustard, sour cream and pepper; drizzle mixture over veggies.
8 - Toss to coat, and sprinkle breadcrumb mixture on top.
9 - Bake until heated through (8 minutes).
10 - Broil for 2 minutes.
