Introduction

Ingredients

    All ingredients subject to whim
    Green Peppers 3 or 4
    Red Peppers 2
    Yellow Pepper 1
    Mushrooms 10
    Carrots 3 or 4
    Jalapeno Pepper
    Canned tomatoes 2 cans
    Pepper
    Oregano

Directions

Makes however much you want to make.
Usually 4 servings.
Cut up everything into stips or slices.
Place all ingredients in large roasting pan and top with canned tomatoes. Season with pepper, oregano and whatever else you want.
Cook on 400 F for about an hour depending on how well you want everything cooked. Can stand alone for vegetarian or is great on pasta or rice with some chicken.
