Number of Servings: 6

Ingredients

    10 oz diced ham
    2 tbsp olive oil
    2 cloves garlic, chopped
    1 medium yellow onion, chopped
    1 cup celery, chopped
    2 cans (15oz) white kidney beans, drained
    1 can mild ro-tel tomatoes with green chiles
    2 cups water
    2 bay leaves
    2 tsp Penzey's Bavarian Seasoning

Directions

Heat olive oil in dutch oven over medium heat. Add garlic, onions and celery. Saute until onions are transparent. Add ham and saute for another 5 minutes. Add rotel tomatoes, water and beans and bay leaves. Bring to a boil. Lower heat to a simmer and cover. Simmer 30 minutes. Use immersion blender to partially blend soup to thicken.
