Ingredients

    1 pound boiled and strained blackeye peas
    1/2 pound grilled and strained turkey bacon
    3 chopped ripe tomatoes (any large variety)
    3 chopped stalks of celery
    3 chopped green onions
    6 cups lettuce (romaine, spring mix, any variety)

    Mustard Vinaigrette:
    1 tbsp dijon mustard
    2 gloves garlic
    1/4 cup balsamic vinegar
    1/3 extra virgin olive oil

Directions

boil 1 lbs. black eye peas in 8 cups of water about 30 minutes.
