Basic chicken and white bean soup.

Ingredients

    2.5 lbs. Chicken Breast, boneless, skinless
    1 large onion
    6 carrots
    4 stalks of celery
    1 tsp crushed garlic
    3 15oz cans white beans
    2 14oz cans chicken broth, fat free, low sodium

Directions

Cut chicken into bite sized pieces, cook in 1TBLS olive oil.
Put in big pan or crock pot.
Finely chop or process onions, carrots and celery and add.
Add chicken broth, beans(and liquid) and garlic.
Bring to boil then simmer for 30 minutes or longer.
Makes 13 1 cups-servings
