Introduction

Don't let the sardines scare you away. This is a great recipe from Alton Brown. I know it is a lot of calories and fat, but it is full of omega's and "heart healthy" oil. You can really get away with only eating one slice of topped bread, but I enjoy it so much I eat two slices as my dinner. (Alton recommends brisling sardines for their mild taste.) Ingredients

    2 tins brisling sardines (3.75oz, double layer), oil reserved
    1 tbsp balsamic vinegar
    2 tbsp chopped parsley, divided
    1/4 tsp lemon zest
    1 ripe haas avocado
    4 slices crust bread ( I used filone, which mae each slice only half a serving of bread., which helps save some calories)

Directions

Drain oil from one sardine tin into a small bowl and set aside. Drain oil from second tin into another bowl. Whisk in vinegar, parsley, and lemon zest. Add fish and stir to coat. (BE GENTLE, or the fish will fall apart) Set aside for one hour.
Just before the hour is up, set your oven to broil. Brush bread with remaining oil. Place oil-side up on baking sheet and broil 3 inches from heat source until golden brown and
crispy, about 2-3 minutes.
Halve avocado and remove pit. Use a fork to mash avocado while still in skin. Spread mashed avocado evenly over the 4 slices of bread. Top with sardines, mashing them into the avocado. Top that with anything remaining in the bowl. Sprinkle with extra fresh parsley and a squeeze of lemon, if desired. Makes 2-4 servings, depending on how many slices you want. Calorie count is for 2 slices!
