Ingredients

4 garlic cloves, minced
2 tsp coriander
1 tbsp olive oil
1 qt. vegetable broth
2 bay leaves
1 cup lentils (brown or green)
2 cups diced potatoes with skin
8 oz. sausage (soy or chicken; chicken used in calorie count)
4 cups stemmed and chopped kale (or spinach if you prefer)
Salt and pepper to taste
Cheese to garnish
Directions
Cook the garlic and coriander in the oil in a large pot for a minute. Add the broth, bay leaves and lentils. Cover and bring to a boil. Reduce the heat and simmer for 10 minutes.
Add the potatoes. Return the cover and cook until the potatoes and lentils are tender, about 15-20 minutes.
While the stew simmers, slice the sausage into rounds and saute them in a skillet over medium-low heat until browned.
When the potatoes and lentils are done, stir in the browned sausage and kale; stir and cook until the kale is tender, about 5 minutes. Add salt and pepper to taste, and top with a grating of cheese.
