Introduction
I read a bunch of recipes last night and ended up taking a little bit from a whole bunch of different recipes, so this is a montage, and I'm so impressed that it was sooooo good. My husband really loved it and my 3yr old even ate it really well. It was very good, hearty and filling, and best of all low in calories. Ingredients
-
2 large boneless skinless chicken breasts
3 cans swanson's chicken broth
2 cans greatland white beans
1 can black beans
1 can green chilis
1/2 package of frozen mixed vegetables (1lb bag [corn, carrots, peas, green beans])
1 can of yellow sweet corn
3 slices ground or crumbled wheat bread (optional for thickening)
1/3 package of white chicken chili seasoning (optional)
oregano and garlic powder to taste
Directions
Makes approx 10 1-cup servings
boil chicken breasts in chicken broth, spoon off any fat, shred chicken with forks. Add all the ingredients bring to boil, then simmer for 30 minutes. I added 3 slices of ground wheat bread to thicken, but you don't have to, you could use pureed veggies, whatever you want as a thickener if you're short on time.
