Number of Servings: 8

Ingredients

    2lb Beef stewing steak (lean) cubed
    5 medium potatoes peeled and diced
    2 cups carrots chopped
    1 cup diced leeks
    1 cup diced onion
    3 large parsnips diced
    half a large swede diced
    4 dessert spoons gravy granules to thicken
    1 oxo cube (mixed with pint of water)
    Salt and Pepper
    Mixed herbs (optional)

Directions

Soften onion in a pan with a drop of stock.
Add the meat, leeks and seasoning. Leave to simmer for 2 hours.
Add the potatoes, carrots, parsnip and swede and simmer for a further 2 hours.
Stir in the gravy granules to thicken the stock.
Serve
