Ingredients

    1 medium apple, skinned and sliced
    3 TBSP butter
    1/4 cup sugar, divided in half
    1 TBSP cinnamon

    1/2 c. white flour
    dash of salt
    1/2-1 tsp vanilla extract (your taste)
    2 eggs
    1/2 milk

    Makes four servings

Directions

Preheat oven to 425 degrees.
Place 10 inch cast iron skillet on stove on medium heat, melt butter. Meanwhile, peel, core, and slice apples. Place apples, cinnamon, and half of sugar with butter to saute. While the apples cook, mix flour, salt, half of sugar, vanilla, eggs, and milk together with a wisk until light. When apples are soft, pour batter over apples, and place pan in oven for 15-20 minutes. When fully cooked, invert apple pancake on to a plate after removing from oven to serve.

    It states that this recipe makes 4 servings under ingred list but the ingred are entered in under 1 serving so ....I think the 726.9 s/b divided by 4 to get proper calorie count if I'm deciphering this correctly. - 5/27/11

    Incredible!
    REALLY GOOD! I didn't have a cast iron skillet, so I poured the apple mixture into a cake pan and then baked it. This worked well though I lost some of the butter and sugar. Note the recipe calls for 2 eggs and the nutritional info is only for egg whites. - 3/13/11
