Great refreshing salad, low on calories! Great refreshing salad, low on calories!
Number of Servings: 2


    Romaine lettuce (as much as desired, I use 1 bunch of leaves)
    1 kiwi, peeled and sliced thinly
    1 orange peeled and sliced thinly (I make 1/2 rings)

    3 tbs cider vinegar
    1 tbs oil
    1 tbs water
    1 tsp lemon juice
    1 tbs sweetener (splenda)
    salt and pepper to taste

    Garnish: you can slice red onion rings, or add almonds or pine nuts (it will add calories tho)


I usually end up eating all this myself, but I do make it for guests every Friday night and it's a huge hit.
Depending on how many people I am having I adjust the amounts of the lettuce, add a kiwi or orange etc.
I keep the dressing amount the same though..

Put all "food" ingredients into a bowl.
Can make the dressing seperately then pour over, or just sprinkle onto the salad ingredient by ingredient and mix well with tongs.

Very quick and easy to put together. A compliment to any meal.
